There is a new section in my local grocer where the stock only offal. For some people this may be so disgusting to look at but for me, it’s exciting. I stand there and hinting about all the things I could make with kidneys, hearts, liver… you get the gist.
I selected buffalo tripe (shaki) as my first experiment. Traditionally, Nigerians add tripe (shako) in stews and soup as they would meat or chicken, eaten as a main meal. I decided to make a starter and below is my take on it:
Ingredients:
500g of cow or buffalo tripe (also called shako), cut into thin strips
8 sticks of okra, cut into bite size chunks
Lurpak Oil Spray
2 tsp of sesame seeds
1 tbs of vegetable oil
2 tsp of crushed garlic
2 tsp of crushed ginger
½ medium onion
8 cherry tomatoes, cut into half
1 tbs of chopped chilli pepper
1 Knorr stock cube
salt to taste
Method:
Boil the tripe in salt water until very soft, use a pressure cooker if you have one. Drain and set aside. Spray a grill pan with very little oil, toast the sesame seeds for about a minute and the add the okra and pan fry while shaking the pan often for about 7 minutes. Remove the fried okra and set aside. Fry the crushed garlic and ginger in a tablespoon of oil, add chopped the onions and chilli and Knorr stock cube plus the boiled shaki. Add 2 tablespoon of water and simmer for about 3 minutes then add cherry tomatoes and cook for another 5 minutes. Take the pan off the heat and then add the okra. serve hot and enjoy!
